Title: Gluten-Free Banana Bread

2 c Gluten-free A-P baking
- flour; w/o xanthan gum
1 ts Baking soda
1/4 ts Salt
4 lg Eggs; room temp
2 c Mashed ripe bananas
1 c Sugar
1/2 c Unsweetened applesauce
1/3 c Canola oil
1 ts Vanilla extract
1/2 c Chopped walnuts
Set oven @ 350ºF/175ºC.
In a large bowl, combine flour, baking soda and salt. In
a small bowl, whisk eggs, bananas, sugar, applesauce,
oil and vanilla. Stir into dry ingredients just until
moistened.
Transfer to 2 greased 8" X 4" loaf pans. Sprinkle with
walnuts. Bake until a toothpick inserted in the center
comes out clean, 45-55 minutes. Cool for 10 minutes
before removing from pans to wire racks.
