Title: Wild Caught Tuna Crostini

Yield: 10 crostini
10 sl (thin) of a baguette loaf
5 oz Can Wild Caught Albacore
- Tuna
5 oz Can Wild Caught Yellowfin
- Tuna
3 tb Mayonnaise
2 tb Relish
2 ts Whole grain Dijon mustard
Salt & pepper
MMMMM--------------------------SPREADS------------------------------
Guacamole
Hummus
Soft cheese
Artichoke or roasted red
- pepper spread
Pesto
Olive tapenade
MMMMM------------------------THIN SLICED----------------------------
Cucumbers
Tomatoes
Pickles
Strawberries
Hard boiled eggs
Canned beans
Micro-greens
Olives; green or ripe
MMMMM--------------------------TOPPINGS------------------------------
Fresh herbs
Pickled ginger
Sesame seeds
Caviar
Capers
Edible blossoms
Citrus zest or tiny wedges
Heat a grill pan over medium high heat until very hot.
Grill the slices of bread on both sides until nicely
browned, about 3 minutes per side. Set aside.
Prepare a simple tuna salad with the Yellowfin Tuna. Mix
all the ingredients until well blended. Adjust seasonings
to your taste. Repeat with the Albacore Tuna.
Assemble your crostini with three layers each. Begin with
tuna salad, flaked tuna, or cream cheese or other spread.
Build a second layer from the list of thin sliced things.
If you didn't use your tuna on the first layer, you can
add flaked tuna in this layer.
Finish with a garnish of herbs, edible flowers, seeds, or
spices from the list.
Serve the crostini right away.
