    Title: Paula Deen's Fortune Cookies
    Categories: Five, Cookies, Novelties
    Yield: 4 servings

    2 Egg whites
    1/2 c Sifted all purpose flour
    1/2 c Superfine sugar
    1 ts Almond extract
    2 tb Water

    SPECIAL EQUIPMENT: silpat

    COOKrCOS NOTE: using a silpat makes it easier to remove
    the cookies from the sheet tray.

    Position an oven rack in the center of the oven and
    set @ 400-|F/205-|C.

    On a half sheet tray, spray a silpat with nonstick
    spray. In a medium bowl whisk egg whites until foamy.
    Add the flour, sugar, almond extract, water, and salt to
    the egg whites and beat until smooth, about 30 seconds.
    Pour or spoon 1 tablespoon of batter onto prepared
    silpat and spread with the back of a spoon into a very
    thin 4" circle. Repeat on the other half of the sheet,
    making only 2 cookies per sheet tray. Bake the cookies
    on middle rack of oven until golden brown around edges,
    about 8 minutes.

    Remove from oven and working very quickly, with an
    offset spatula, remove cookie from baking sheet and
    place a fortune in the center of the round. Fold to
    create a half circle. Bend pointed edges of cookie
    toward each. This should be done quickly since the
    cookie will become hard and brittle within 10 seconds.
    Let cool.

    Title: Homemade Fortune Cookies
    Categories: Cookies, Novelties, Dairy
    Yield: 24 servings

    5 tb Butter melted
    4 Egg whites
    3/4 c Sugar
    1 c All-purpose
    1/8 ts Salt
    3 tb Heavy cream
    1 ts Almond extract
    1 ts Vanilla

    MMMMM--------------------------OPTIONAL-------------------------------
    Dipping Chocolate
    Sprinkles

    EQUIPMENT: Cookie Sheet, Silpat Mat, Standard Muffin Tin

    BEFORE YOU MAKE THE FIRST COOKIE:

    Set oven @ 375oF/190oC.

    Gather your materials: you will need a cutting board, a
    coffee mug and a muffin tin.

    Print out and cut fortunes.

    Be sure to do this before you bake the cookies. You will
    not have time to do it when they come out of the oven!

    MIXING THE BATTER: In a blender or mixer, combine egg
    whites and sugar.

    Beat for about a minute, and then add flour and salt and
    beat another 30 seconds. (I do this all in my blender.)

    Add melted butter, heavy cream, and vanilla and almond
    extracts and beat until mixed.

    MAKING THE COOKIES: Spoon 1 tablespoon of dough onto
    silicone baking sheet or parchment paper. (I use a
    Silpat sheet.)

    Spread batter with the back of a spoon into a thin 4-5
    inch circle.

    Start by making 2 circles at a time. (I don't ever do
    more than 3 at a time.)

    Bake for 5-6 minutes, or until the edges are lightly
    browned.

    Remove from the oven.

    Immediately take one cookie and place it on a wooden
    cutting board.

    Keep bottom (the side that was "down" while cooking)
    down.

    Place a fortune in the middle of the cookie and fold in
    half.

    Place the middle of the flat side over the edge of a
    coffee mug.

    Pull the corners down to shape.

    Immediately place the formed cookie into a muffin cup
    and allow it to cool completely.

    Repeat process until all the batter has been used.
