    December 22 - National Date Nut Bread Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Rosemary's Date Nut Bread
    Categories: Breads, Fruits, Nuts, Citrus
    Yield: 2 Loaves

    1/4 c Shortening
    1 1/2 c Sugar
    2 lg Eggs
    1 1/2 ts Vanilla extract
    3 c All-purpose flour
    2 ts Baking soda
    2 ts Baking powder
    1/4 ts Salt
    1 1/2 c Orange juice
    1 1/2 c Chopped dates
    1/2 c Chopped walnuts

    In a bowl, cream shortening and sugar. Add eggs and
    vanilla; beat until fluffy. Combine dry ingredients; add
    alternately to creamed mixture with orange juice. Blend
    well. Fold in dates and walnuts.

    Pour into two greased, floured and waxed paper-lined 8"
    x 4" loaf pans. Bake @ 350ºF/175ºC for 45-50 minutes or
    until a toothpick inserted in the center comes out
    clean. Cool in pans 10 minutes before removing to a wire
    rack.

    Title: Walnut-Date Quick Bread
    Categories: Breads, Fruits, Nuts
    Yield: 1 Loaf

    1 c Chopped dates
    1 c Boiling water
    3 tb Butter, softened
    1 c (packed) brown sugar
    1 lg Egg
    1 3/4 c A-P flour
    1 ts Baking soda
    1/4 ts Salt
    1 c Chopped walnuts

    In a small bowl, combine the dates and water; let stand
    for 15 minutes (do not drain). In a bowl, cream butter
    and brown sugar; add egg and mix well. Combine flour,
    baking soda and salt; add to the creamed mixture
    alternately with dates and liquid. Stir in walnuts.

    Pour into a greased 8" X 4" loaf pan. Bake @ 350ºF/175ºC
    for 60-65 minutes or until a toothpick inserted in the
    center comes out clean. Cool on a wire rack.

    Title: Date-Nut Bread w/Cream Cheese & Walnuts
    Categories: Breads, Fruits, Nuts, Cheese
    Yield: 1 Loaf

    1 1/2 c Dates; pitted, chopped
    1 ts Salt
    1 c Boiling water
    1/2 ts Baking soda
    1/2 c Dark brown sugar
    1 1/2 ts Baking Powder
    1 lg Egg; beaten
    1/2 c Walnuts; coarse-chopped
    3 tb Shortening; melted

    MMMMM---------------------------SPREAD--------------------------------
    1 ts Vanilla extract
    Cream cheese
    2 c A-P Flour; sifted
    Walnuts; Fine-chopped

    Place dates in a mixing bowl and add boiling water. Let
    stand until fairly cool. Add brown sugar, egg,
    shortening and vanilla. Stir flour, salt, baking soda
    and baking powder into mixture. Add nuts. Stir until
    well mixed.

    Bake in a greased and floured loaf pan in a 350oF/175oC
    oven for 1 hour. Remove to a cooling rack.

    Cream cheese is mixed with chopped walnuts and spread on
    slices of date-nut bread.
