    December 19: National Oatmeal Muffin Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Ursula's Breakfast Muffins
    Categories: Breads
    Yield: 15 servings

    1/2 c Oat bran
    1/2 c Whole-wheat flour
    1/2 c Whole-wheat pronutro
    1/2 c GI oats
    1/2 c High-fibre cereal
    1/2 c Cake flour
    1 c Digestive bran
    1/2 ts Salt
    1 ts Baking powder
    1/2 ts Bicarbonate of soda
    1/2 c Sultanas
    1 sm Granny apple or firm pear;
    - grated
    1 sm Raw sweet potato; grated
    1 lg Egg; separated
    1 ts Vanilla essence
    2 tb Oil
    1/2 c Soft brown sugar
    1 1/2 c Milk

    Set the oven @ 220°C/425°F.

    Mix all the dry ingredients, then add the sultanas, the
    grated apple or pear and the sweet potato. Mix gently
    and set aside.

    Beat the egg yolk, vanilla essence, oil and sugar
    together in a large bowl.

    Add the dry ingredients, alternating with the milk. mix
    gently, but thoroughly.

    Whisk both egg whites to the soft peak stage and gently
    fold into the batter.

    Spoon the batter into greased muffin pans, slightly
    overfilling each muffin hollow and place in the hot
    oven.

    Turn the oven temperature down to 180°C/360°F and bake
    for 20 - 25 minutes.

    Insert a skewer in the centre of a muffin to check
    whether they are cooked.

    If there is any raw batter on the skewer, bake for
    another 5 minutes.

    Title: Easy Oatmeal Muffins
    Categories: Breads, Grains, Dairy
    Yield: 12 servings

    1 c Milk
    1 c Quick cooking oats
    1 lg Egg
    1/4 c Oil
    1 c A-P flour
    1/4 c White sugar
    2 ts Baking powder
    1/2 ts Salt

    Set the oven @ 425ºF/218ºC.

    Grease 12 standard muffin cups or line with paper muffin
    liners.

    Combine milk and oats in a small bowl; let soak for 15
    minutes.

    Beat together egg and oil in a large bowl; stir in oat
    mixture. Sift together flour, sugar, baking powder, and
    salt in a separate bowl. Stir flour mixture into wet
    ingredients until just combined. Spoon batter into the
    prepared muffin cups until 2/3 full.

    Bake until a toothpick inserted into the center of a
    muffin comes out clean, 20 to 25 minutes.

    Yield: 12 muffins
