Title: Left Over Turkey Enchiladas

Yield: 10 Servings
1/4 c Olive oil
1/2 c Onions; chopped
1/2 c Bell pepper; chopped
2 c Left over turkey; chopped
2 c Corn niblets
15 oz Can enchilada sauce
3 ts Chilli spice mix
1 ts Salt
1 c Cheddar cheese; shredded,
- divided use
10 Flour tortillas
Set oven @ 350ºF/175ºC.
In a large saucepan, cook onions and bell peppers in oil
until tender. Stir in turkey, corn, enchilada sauce,
chilli spice, and salt until cooked through.
Spread about 1/10th filling and 2 tsp cheese on each
tortilla, roll up and place seam side down on a baking
sheet lined with foil.
Sprinkle with remaining cheese. Bake for 30 minutes.
Serving Size: 10
