Title: Walnut Cake

Yield: 12 servings
1/2 c Butter; room temp
2 1/4 c Sugar; divided
2 lg Eggs; lightly beaten
2 c A-P flour
1 ts Baking powder
1 ts Baking soda
1/2 ts Ground cinnamon
2/3 c Milk
1 1/2 c Chopped walnuts
Grated rind of one lemon
1 c Water
Set oven @ 350ºF/175ºC. Coat a 9" x 13" baking pan with
cooking spray.
In a medium bowl, cream the butter then add 1 cup sugar
and the eggs. Blend well and add the flour, baking
powder, baking soda, and cinnamon alternately with the
milk. Mix in the nuts and lemon rind.
Blend well and pour into prepared baking pan. Bake 45
minutes, or until a wooden toothpick inserted in center
comes out clean.
Meanwhile, in a small saucepan, combine remaining 1-1/4
cups sugar and the water over medium heat, and boil 15
minutes.
Pour sauce over cake while both are still warm. Turn off
the oven and return cake to warm oven for 5 minutes.
