    Title: Pfeffernusse
    1/4 ts Fresh ground black pepper

    The very essence of what Peppernuts or German Pfeffernusse are is
    the addition of pepper to the spice mix. Preferably white pepper.
    Only 2 of your 5 recipes have any pepper in them at all.

    Roslind made a couple hundred Danish Pebernodder last Sunday which
    are the same thing. She got the recipe from her first husband's
    Danish mother and grandmother. It calls for equal amounts of ginger,
    cinnamon, cardamom. and white pepper.

    Title: Chocolate Tapioca Pudding
    Categories: Chocolate, Coffee, Pudding
    Yield: 8 Servings

    1 c Sugar
    3 tb Tapioca
    1/8 ts Salt
    3 2/3 c Milk
    1 Egg
    2 oz Unsweetened Chocolate
    2 ts Instant Coffee
    1 ts Vanilla

    Combine sugar, tapioca and salt in saucepan; stir in milk and beaten
    egg. Let stand 5 minutes. Add chocolate and instant coffee. Cook and
    stir over medium heat until mixture comes to a full boil and
    chocolate is well blended, about 15 minutes. Remove from heat and
    stir in vanilla. Cool for 20 minutes, stir. Chill.

    Makes about 8 servings.

    Try these:

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Moravian Cookies
    Categories: Cookies, Snacks
    Yield: 1 Recipe

    2 c Shortening
    2 1/4 c Brown sugar
    1 qt Molasses
    8 c Flour
    1 tb Ground cloves
    1 tb Cinnamon
    1 ts Ginger
    1/2 ts Baking soda
    +=DISSOLVED IN=+
    1 ts Vinegar

    Use a mixture of butter and lard for the shortening. Sift
    the flour and spices together. Add sugar and mix well.
    Work in the shortening with the finger tips or with a
    pastry blender. Add baking soda and molasses and mix
    thoroughly. Chill.

    Roll very thin on floured board and cut with fancy cookie
    cutters.

    Bake at 350ºF/175ºC about 10 minutes.

    That's like making chili con carne without chilies!

    Roslind once had a Norwegian friend back in her university days and
    she recently remembered her having a traditional Christmas breakfast
    dish: thin potato lefse so Roslind found a recipe for it using half
    white and half whole wheat flour together with mashed potatoes and
    made us some yesterday to start the day with. Scandinavian potato
    tortillas! Very tasty.

    I won't be making any of them in my lifetime as they tend to call for
    anus oil. star anus, or anus flavouring. As I abhor black liquorice - I
    will not waste time or treasure making those.

    Never tried (or wanted to try) lutefisk - so I've never essayed these.
    The recipe does look decent though - if you leave the lutefisk in its Scandinavian home. Bv)=

    Title: Traditional Potato Lefse Recipe
    Categories: Potatoes, Breads, Dairy
    Yield: 8 Servings

    3 c Cooled, mashed potatoes
    3 c Sifted flour
    1 ts Salt
    1 tb Sugar
    2 tb Butter
    2 tb Cream or half & half

    A traditional accompaniment to lutefisk.

    Mix all ingredients together. Using one tb of dough at a
    time, roll thin on a floured board. Bake on both sides
    (turning once)on a pre-heated griddle until a few light
    brown spots form on each side. Cool on dish towels,
    keeping each piece separate from the others.

    To serve: Spread with butter; sprinkle with sugar; roll
    up.
