    December 19: National Oatmeal Muffin Day

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Matthew's Morning Muffins
    Categories: Breads, Grains, Fruits, Dairy
    Yield: 24 Servings

    Nonstick spray
    1 1/4 c All-purpose flour
    1 1/4 c Whole wheat flour
    1 c Dark brown sugar (packed)
    1 ts Baking soda
    1 ts Baking powder
    1 ts Nutmeg
    1 ts Salt
    2 c Old fashioned oats (NOT the
    - quick-cooking kind)
    1 c Raisins
    6 tb Olive oil
    2 lg Eggs
    2/3 c Milk
    1/4 c Unsweetened applesauce
    1 1/2 c Shredded carrot
    2 Very ripe bananas; mashed

    Set oven to 400ºF/205ºC.

    Coat two 12-cup muffin pans liberally with cooking spray.

    In a large bowl, combine flours, sugar, baking soda,
    baking powder, nutmeg and salt. Stir until blended and no
    lumps remain. Stir in oats and raisins, then add oil,
    eggs, milk, applesauce, carrot and bananas. Stir until
    blended.

    Fill each muffin cup about 1/2 full. Bake on middle rack
    until a cake tester comes out clean, roughly 23 minutes.

    Serve warm, or cool then store in an airtight container
    for up to 3 days.

    Title: Oatmeal Muffins w/Raisins, Dates & Walnuts
    Categories: Breads, Grains, Fruits, Nuts. dairy
    Yield: 12 servings

    1 c Rolled oats
    1 c A-P flour
    1/2 c Brown sugar; packed
    1/2 ts Salt
    1 ts Baking powder
    1/2 ts Baking soda
    1/2 ts Cinnamon
    1/4 c Fine chopped toasted
    - walnuts
    1/3 c Raisins
    1/3 c Chopped dates
    1/2 c Butter; melted, cooled
    1 c Buttermilk
    1/2 ts Vanilla extract
    1 lg Egg; beaten

    Grease a twelve-slot muffin tin or line the slots with
    paper baking cups.

    MIX THE DRY INGREDIENTS: Mix together the rolled oats,
    flour, brown sugar, salt, baking soda, baking powder,
    cinnamon, walnuts, dates, and raisins. In a separate
    bowl mix together the buttermilk, egg, vanilla extract,
    and butter.

    COMBINE THE WET INGREDIENTS WITH THE DRY: Pour the wet
    ingredients into the dry mixture and stir together. Be
    sure not to over-stir as that will cause the muffins to
    develop too many gluten bonds. It should be thick and
    gloppy. About 10 seconds of stirring should do; just
    enough to barely bring the ingredients together.

    SCOOP INTO THE PAN AND BAKE: Scoop into prepared muffin
    tray and bake @ 400ºF/205ºC for 20 minutes or until a
    toothpick comes out clean. Cool in the tray for a minute
    or two before transferring to a wire rack to cool
    completely.
