Title: Old World Spanish Chicken

Yield: 4 servings
1/3 c Olive oil
3 1/2 lb Chicken; in 8 pieces
1 c White wine
1 sm Onion; peeled, chopped
1/2 c Chopped fresh parsley
1 tb Chopped fresh garlic
1 Bay leaf
1 ts Salt
1 ts Black pepper
1/4 ts Paprika
In a soup pot, heat oil over medium-high heat. Add
chicken and saute about 15 minutes, or until golden on
all sides, turning occasionally.
Add remaining ingredients and bring to a boil. Reduce
heat to low and simmer 30 to 35 minutes, or until
chicken is tender and no pink remains. Remove bay leaf,
and serve.
