    Fillet the kipper in the usual way. Butter some toast. Place fillet
    on top and cut into any shape you may fancy. Put a little grated
    cheese, cayenne pepper or black pepper, a pinch of breadcrumbs, and
    a little butter. Put in paper bag and place on grid. Allow five
    minutes in a very hot oven (350F).

    Well we do satisfy your "only eighty" crowd, but we have never had a
    full service cell phone. We both have flip phones that we only use in
    rare occasions. Mine lives in the car, Gail's in her purse. The cost
    for both is less than $200 per year (maybe < $150, not sure). We got
    one of them decades ago when we had a road break down and could not call
    AAA. I would use mine when I was working in Virginia after I retired
    and got out a bit late, hence hitting heavy traffic. Sometimes to call
    from the store to see if there is anything else she needs. Since the
    minutes roll over, I have about 3600 minutes on it at present.

    Lately, we have been making something similar with yogurt vs. sour
    cream. I think that is even better. For a sweeter dish, use whipped
    cream or dream whip.

    Title: Dump Fruit Salad

    Yield: 6 servings

    1 c Mandarin oranges, drained
    1 c Pineapple chunks, drained
    1 c Flaked coconut (optional)
    2 c Minature marshmallows
    1 c Sour cream (high quality)
    1 tb Sugar
    6 Maraschino cherries for the
    Garnish (optional)

    Mix all the canned fruit, sugar and coconut thoroughly in mixing bowl.
    Fold in the sour cream and marshmallows. Transfer to decorative
    serving bowl, cover with plastic wrap and refrigerate up to 24 hours.
    Right before serving you could garnish with a few marachino cherries
    placed on the top of the salad.

    I'm not over 80 (yet) and I work a job outside the home. AND I have
    both a cell (which costs me U$15/month) and a land-line phone - for very
    good reasons which I have stated here before. Yout mileage obviously
    varies. And there is not finite data plan on my land line. Bv)=

    Title: Baked Stuffed Flounder
    Categories: Seafood, Stuffing, Breads
    Yield: 4 Servings

    4 (1 1/4 lb/500 g) flounders
    1/2 c Celery; chopped fine
    1 cl Minced garlic
    8 tb Butter
    1/2 lb (225 g) shrimp; boiled,
    - chopped
    1/2 lb (225 g) crabmeat; picked
    1 lg Egg; slightly beaten
    1/2 c Chopped green onions
    1 c Bread crumbs or panko
    2 tb Chopped parsley
    Salt, pepper & cayenne

    Saute celery, onions and garlic in 4 tb melted butter.
    Add bread crumbs, shrimp, crabmeat and parsley. Mix well.
    Season to taste with salt, pepper and cayenne.

    Split thick side of each flounder, lengthwise and cross-
    wise, and loosen meat from bone of fish to form a pocket
    for stuffing.

    Brush well with additional melted buttter, salt & pepper.
    Stuff pocket with dressing.

    Melt remaining 4 tb butter in shallow baking pan. Place
    fish in pan. Cover and bake @ 375ºF/190ºC. for about 30
    minutes. Remove cover and bake additional 5 minutes.

    Title: Crab Stuffing
    Categories: Seafood, Breads, Stuffing
    Yield: 8 Servings

    1 lb Crabmeat; picked over
    1/3 c Chopped celery
    1/3 c Melted fat
    2 c Bread crumbs
    3 lg Eggs; beaten
    1/2 c Chopped onion
    1/3 c Chopped green pepper
    2 cl Garlic; fine chopped
    1 tb Chopped parsley
    2 ts Salt

    Drain crabmeat. Cook onion, celery, green pepper and
    garlic in fat until tender. Combine bread cubes, eggs,
    parsley, salt, pepper, cooked vegs. and crabmeat.

    Mix well. Fill crab shells with mixture, bake @ 350ºF
    for about 30 minutes.

    This can be used as a casserole or a stuffing for fish
    also.

    During Covid when Roslind did telephone counselling rather than face
    to face sessions, she would use that much in 10 days. It would
    last me 2 months though.

    season.
