Title: Greek-Style Lemon-Garlic Chicken

Yield: 8 servings
8 md Yukon Gold potatoes
1 c Pitted Greek olives
8 Bone-in chicken thighs
1/2 c Olive oil
3 tb Lemon juice
6 cl Garlic; minced
2 ts Salt
2 ts Dried oregano
1/2 ts Pepper
1 1/2 c Chicken broth
Set oven @ 375ºF/190ºC.
Scrub potatoes; cut each into 8 wedges and place in a
shallow roasting pan. Top with olives and chicken. In a
small bowl, whisk oil, lemon juice, garlic, salt,
oregano and pepper until blended. Drizzle over chicken
and potatoes. Pour chicken broth around chicken into
pan.
Bake, uncovered, until potatoes are tender, 60-70
minutes. Serve with pan juices.
