MMMMM----- Recipe via Meal-Master (tm) v8.06
Title: Chicken Verona & Vodka Sauce

1 c Dry breadcrumbs
1/3 c Parmesan cheese grated
1/4 c Parsley; fresh chopped
1 ts Salt; opt
1/4 ts Pepper
1/2 ts Dry mustard
6 tb Melted butter
1 cl Garlic; or more, minced
4 Chicken breasts; pounded
- 1/4", cut in 4 strips per
- breast
MMMMM------------------------VODKA SAUCE-----------------------------
1/2 c Butter
1 lg Onion; diced
1 c Vodka
56 oz (2 cans) crushed tomatoes
1 tb Fresh parsley; chopped
1 ts Dried oregano
1 ts Minced garlic
1 pt Heavy cream
MAKE SAUCE: In a skillet over medium heat, saute onion in
butter until slightly brown and soft. Pour in vodka and
let cook for 10 minutes. Mix in crushed tomatoes,
parsley, oregano & garlic and cook for 20 minutes. Pour
in heavy cream and cook for another 20 minutes.
MAKE CHICKEN: Mix breadcrumbs, cheese, mustard, parsley,
salt and pepper and spread on paper plate or similar to
dip/bread chicken.
Melt butter in a small frying pan and mix in garlic.
Dip each chicken breast in butter mixture and dredge in
breadcrumb mixture.
Place in a single layer in a shallow baking pan.
Pour remaining butter and breadcrumbs over chicken.
Bake at 350ºF/175ºC for about 30-35 minutes.
