Title: Prime Rib Sandwich w/Roasted Poblanos & Garlic Mayo

Yield: 2 servings
8 oz Prepared prime rib
1 ts Olive oil
2 tb Cajun seasoning
1/4 c Beef stock
1 lg Poblano pepper
Shredded pepper jack cheese
3 tb Mayonnaise
1 ts Garlic powder
2 lg Bolilo buns
Rough chop the prime rib and add it to a pan with olive
heated to medium heat. Heat it through about a minute.
Add the Cajun seasoning and stock. Stir and simmer until
the stock reduces and the prime rib is nicely coated
with seasonings.
Roast the poblano pepper over an open flame, flipping
often, until the skin chars and blackens. You can also
roast it in the oven or broiler. See How to Roast Chili
Peppers. Wrap the poblano in paper towel until it cools,
then peel off the charred skins. Finely dice the
poblano.
Set the oven @ 350ºF/175ºC.
Slice open the buns and stuff them with prime rib. Top
with shredded cheese and poblano peppers.
Bake for 5 minutes to allow cheeses to melt and get the
bread a bit crusty.
Mix the mayo and garlic powder and top your sammiches!
