    Title: Egg & Potatoes Casserole
    Categories: Eggs, Cheese, Vegetables, Potatoes, Chilies
    Yield: 6 Servings

    Cooking spray
    2 c Loose-pack frozen, diced
    - hash browns; w/onion and
    - bell pepper
    1 c Broccoli florets or
    - asparagus spears
    1/2 c Fine chopped Canadian-style
    - bacon
    1/3 c Evaporated milk
    2 tb All-purpose flour
    12 lg Eggs
    1/2 c Shredded cheddar
    4 oz Can chopped green chilies
    1/2 ts Dried basil; crushed
    Black pepper & salt

    Preheat oven to 350ºF/175ºC. Coat a 2 quart round baking
    dish with nonstick cooking spray. Arrange hash brown
    potatoes and broccoli or asparagus in bottom of baking
    dish; top with Canadian bacon or ham. Set aside.

    In a medium bowl gradually stir evaporated milk into
    flour. Stir in eggs, chilies, half of the cheddar cheese,
    the basil, black pepper, and salt. Pour egg mixture over
    vegetables.

    Bake in preheated oven for 40 to 45 minutes or until a
    knife inserted near center comes out clean. Sprinkle with
    remaining cheddar cheese.

    Let stand for 5 minutes before serving.

    Makes six nice wedges
