Title: Cream of Wine Sauce

Yield: 8 Servings
4 tb Butter
2 tb Flour
1 pt Sour cream
6 oz Dry white wine
11 oz Can cream of mushroom soup
1/4 ts White pepper
1/4 ts Cayenne pepper
1/8 ts Dried oregano
1/8 ts Dried thyme
2 ts Grated Parmesan cheese
1/2 c Hot milk
1/2 c Hot water
Melt butter at 400ºF/205ºC in a deep saucepan. Let the
moisture evaporate.
Blend in flour until smooth. Reduce heat to 200ºF/93ºC.
Add milk and blend in sour cream.
Bring to a simmer. Add soup and 1/2 cup hot water, whisk
thoroughly. Add additional hot milk if needed to control
thickness. Blend in cheese, make sure cheese is thoroughly
melted. Bring to a simmer, add wine. Blend well and add
pepper, cayenne, oregano, and thyme.
Simmer to desired thickness.
