Hi All,
Made a batch of mincemeat cookies today. Making a pie later so I was
able to easily "borrow" a cup from the jar.
These were a huge hit. My kitchen is gluten free, so I used a generic
all purpose GF flour from costco.
This is the recipe I used (from the internet).

Title: Mincemeat Cookies
Categories: Dessert
Yield: 8-12 cookies
1/2 c butter
1 c sugar
1 egg
2 c Flour
1 t Baking Powder
1/2 t Baking Soda
1/2 t salt
1 c Mincemeat
[Note: Mincemeat cookies. ]
Mix all ingredients together.
If you find it is not quite thick enough, slowly add more flour.
Drop by teaspoons on greased cookie sheet.
Bake 350 for 10-12 min. (My oven was 12 mins, then I let them
cool IN THE oven with the heat off for about an hour)
Cool on a baking rack. (I did not do this)
